The two that I've been most impressed with are by Jerry Katz and by Lisa Gundry & Jill Kickul. Both, I think are newby-friendly, but could be used elsewhere. The authors are very helpful!
The last time I taught intro - I found success with a set of smaller books - Drucker's Innovation & Entrepreneurship is a terrific intro (and is an inexpensive paperback - <$10) Another out-of-the-box choice is Dave Bornstein's social entrep intro, How to Change the World, that Ashoka recommends. (And it will help you recruit non-business majors -and open the eyes of the biz majors...)
John Mullins's book on what to do before you do a business plan looks promising too.
