Now that Eve Online has been mentioned, I would like to suggest Second Life.
It's free to join, has its own currency and its own online economy. The
whole world has been created by the players/users and a brimming
entrepreneurial economy has been set up. Everything from retail, design to
real estate exists.

I would recommend Railroad Tycoon 2 or 3 rather that those you mention.
I would say they are more suitable for adults than Roller Coaster Tycoon
or Sim City, and are somewhat realistic in their treatment of
competition, environmental change, and business complexity. (I'm just
getting my six-year old started on Zoo Tycoon 2.) Even better however
are online games, especially EVE Online, in which an extremely
sophisticated business can be established from the ground-up, based
around an extremely realistic market, albeit without sophisticated
capital raising/exit mechanisms. I would very much like to run an
experimental course based on EVE one day.
