Hi Dev:
Lots of schools ask groups of students in such intro courses to identify an entrepreneurial opportunity and then rigorously assess its feasibility in a group project, in which students are judged on the quality of the work done, rather than on whether the opportunity is judged feasible or not, once the research has been carried out. Assessing opportunities is a crucial entrepreneurial skill.
We don't have any undergrads at London Business School, but I'd be happy to email you (or other readers of this post) the course outline for our similar MBA course if you like (attachments are not permitted here). You (and your students) can also download Chapter 1 of my trade book, The New Business Road Test 4th edition, from my faculty website (free) which you will find in my signature below. The book provides the structure for the course via its seven domains opportunity assessment framework. Many schools use the book as a text for such courses, though it's a trade book, not a textbook (and therefore about $30, not $100!).
The cases we use (identified in the course outline I will send you) can be found on the European Case Clearing House website at www.thecasecentre.org. You will LOVE teaching such a course.
Best,
John

Subject: [ENTREP] Intro Entrepreneurship Course for Non-Business Students
Hello All,
Greetings!
I will be teaching an Introduction to Entrepreneurship course to non-business students (sophomore/junior) for a soon-to-be-introduced university-wide Minor in Entrepreneurship.
I am requesting to ask if anyone here offers such a course, and if so, would you be so kind as to share more information about your course? This could be the course syllabus, reading list, experiential exercises, simulation, and/or favorite cases? A variant of the course will also be offered in online or hybrid mode, so if you have any specific suggestions about online delivery of the course, please also send them my way.
Please respond directly to me at my email: dev.dutta@unh.edu
If there is interest from the community, I will be pleased to compile the information I receive and share it with whoever might be interested.
Thank you so much!
Kind regards,
Dev Dutta.
