Good evening -
We are figuring out how to work with an alum who is a very successful entrepreneur in the restaurant industry. He would like to teach a course that focuses around the restaurant industry/concept and possibly also franchising. Obviously we have students very interested in this, so it would be a great vehicle for us to engage a wide variety of students. Can anyone suggest a good text for a similar class you're running, and also if you have a syllabus to share that would be phenomenal.
