Regarding opportunity recognition, I use the 'Surrounding opportunities exercise' which is, after giving the key concepts of techniques to identify business opportunities, you divide the class into groups of 3 to 4 students and send them to the streets. Each group will take a different block surrounding the school (you assign them through a neighborhood map). Their mission is to find at least three business opportunities within 30 mins and come back to share their findings with the colleagues.
If you do this exercise with graduate students, depending on their background formation, it is amazing how creative they are. Some of the best ideas I've heard from them are: Advertising in blank walls with projectors, empty locations fast short term rental service, flashmob promotions service, building embellishment service, etc.
