We offered a course in blockchain in the fall of 2018 which I developed a taught--and it included participation from several faculty members from all across campus. I've attached the syllabus here. A link to the reading materials and course schedule can be found here: Blockchain Fundamentals Course, Fall 2018, Schedule and Commitments . Please reach out to me privately if you'd like to discuss what our experience was and what I'd do differently next time.

Hello.  I developed and taught a graduate-level BC/FT course in the DMSB at Northeastern University with a colleague when I was a professor at Northeastern.  I also co-developed a course on BC/FT for the MIT Enterprise Forum.
Ironically I am working on a paper regarding lessons we learned with doing these courses - I'll send you a draft if you like.
There aren't any textbooks, but many resources are available from practice-focused publications.  I did draw from some CS books, since we covered some core programming concepts in our courses; such concepts are critical to developing FT and BC apps.  Most of the published academic research isn't of much value, at least not yet.
As part of my ongoing research related to financing innovation and entrepreneurial finance I have been doing work related to ICO.  You may find that topic of relevance to your work.
I'm now primarily working in industry, but would be delighted to review your initial course design and syllabus.  Also, please feel free to call me if a phone discussion would be of value.
    Best.
